Anisaldehyd lugter sødt og frugtigt, lidt som hindbær og kirsebær, men med et let krydret facet også. Kraftfuld og temmelig langvarig for en frugtet-blomsteragtig note, der er mere veltalende end nogle af de frugtede estere. Nyttig i kirsebær-, hvidtjørn- og heliotropaccords. Husk på, at denne er temmelig begrænset af IFRA.
