Anisaldehyd riecht süß und fruchtig, ein wenig wie Himbeere und Kirsche, aber auch mit einer leichten würzigen Facette. Kraftvoll und für eine fruchtig-blumige Note ziemlich langanhaltend, dabei ausdrucksstärker als einige der fruchtigen Ester. Nützlich in Kirschen-, Weißdorn- und Heliotrop-Akkorden. Beachtet, dass dieser Stoff bei der IFRA ziemlich eingeschränkt ist.
