Benzylsalicylat wird in der Parfümerie ausgiebig als Schlüsselstrukturkomponente in vielen Kompositionen verwendet und ist ein Schlüsselbestandteil des Mellis-Akkords. Allein riecht es subtil, warm, balsamisch und blütenblattartig. Es ist sehr nützlich als lang anhaltende Strukturkomponente, um Blumenakkorde und das Herz von Parfums im Allgemeinen zu untermauern. Es hilft, andere Materialien zu mischen, und wird oft großzügig verwendet.
