El anisaldehído huele dulce y afrutado, un poco a frambuesa y cereza, pero también con un ligero matiz especiado. Poderoso y bastante duradero para una nota afrutado-floral que es más elocuente que algunos de los ésteres afrutados. Útil en acordes de cereza, majuelo y heliotropo. Ten en cuenta que este está bastante restringido por la IFRA.
