El anisaldehído huele dulce y afrutado, un poco como frambuesa y cereza, pero con una faceta ligeramente especiada también. Potente y bastante duradero para una nota afrutada-floral que es más elocuente que algunos de los ésteres afrutados. Útil en acordes de cereza, espino y heliotropo. Tenga en cuenta que este está bastante restringido por la IFRA.
