Eugenol makes up the major component of Clove Essential Oil and thus its smell resembles that of cloves closely. It's also a major component of other spice oils such as allspice and cinnamon. Eugenol is naturally found in many places in nature, including carnations and other "spicy" flowers where it characterises the smell, as well as rose, where its responsible for the darker nuances. As such, eugenol is very useful in spicy or gourmand compositions, as well as floral recreations. It can even be used to add a touch of vanilla "realism" to Vanillin.
