Cocoa is a difficult smell to reproduce via an accord in perfumery due to it's complex composition of many trace molecules which are not readily available to the perfume as raw materials. Thus if you want an accurate cocoa note, the easiest thing to do is use an extract from the real thing, like this Cocoa Absolute. Why would you want to employ the use of a cocoa note you may ask? Simply create an accord with Vanillin and you have a sketch of the smell of chocolate.

Cocoa trees grow in most countries of the tropical zones. Their fruits, called cocoa pods, are opened with a machete to release their white beans. The beans are washed, fermented and dried, after which they turn brown. They are then ground to separate the cocoa powder from the cocoa butter. The absolute offers the most ultimate concentration of the natural resource. Typical scent of the dark chocolate note, this extract offers its very powerful characteristic effects. Perfectly adapted to fine fragrance, it works with all accords to give this very playful gourmand touch. It will also be very interesting in the reconstitution of castoreum bases.
