Anisaldehyde ruikt zoet en fruitig, een beetje als framboos en kers, maar ook met een licht kruidig facet. Krachtig en vrij langhoudend voor een fruitig-bloemige noot, sprekender dan sommige fruitige esters. Handig in kersen-, meidoorn- en heliotroopakkoorden. Houd er rekening mee dat deze vrij beperkt is door de IFRA.
