L'eugenolo costituisce il componente principale dell'olio essenziale di chiodi di garofano e il suo profumo ricorda da vicino quello dei chiodi di garofano. È anche un componente importante di altri oli speziati come il pimento e la cannella. L'eugenolo si trova naturalmente in molti luoghi in natura, inclusi i garofani e altri fiori 'speziati' dove caratterizza l'odore, così come nella rosa, dove è responsabile delle sfumature più scure. Pertanto, l'eugenolo è molto utile nelle composizioni speziate o gourmand, così come nelle ricreazioni floreali.
