O anisaldeído cheira doce e frutado, um pouco como framboesa e cereja, mas com uma faceta ligeiramente picante também. Poderoso e bastante duradouro para uma nota floral-frutada que é mais eloquente do que alguns dos ésteres frutados. Útil em acordes de cereja, espinheiro e heliotrópio. Tenha em mente que este é bastante restringido pela IFRA.
