Fructone is an extremely useful aromachemical when recreating fruity accords. It has a sweet fruity odour which sits somewhere between apple and strawberry and is useful when making either of those accords in particular. It's used extensively by master perfumer Jean Claude Ellena in his illustrative fruit accord sketches in his books; Diary of a Nose, and Perfume: The Alchemy of Scent. To the perfumer here at The Fragrance Foundry, fructone represents a general sweet fruity base which can be taken in any direction with specific additions to create the desired fruity accord.
